Boston Butt? Im cooking dinner and feel like boston butt. Should I try to smoke it or cook it slow or what? What about a rub? Which way should I lay the bone? I hear that makes a difference on how it will come out. Covered or uncovered? |

When smoking a boston butt, how fast should the temperature rising at the start? I'm cooking a Boston Butt, and was told 1 1/2 - 2 hours per pound, which would mean the meat should take 12 hours. I am using a modified minion method, laying the coals out in a ring pattern and letting them light like in a domino fashion. In the first 2 hours and 10 minutes, the meat has gone from 72 degrees to 102 degrees. This seems fast to me. Is it normal? |

Can you cook a boston butt in the crockpot? I have never cooked a boston butt before, but my local grocery store has them on sale for a great price! What is the best way to cook it. All suggestions would be appreciated. |
Sure. It's great BBQ'd. Begin cooking the Boston Butt in the crock pot a day before you plan to serve it because it needs a long cooking time. Place the meat in the crock pot with 1/4 cup water and salt and pepper to taste. Cover and set crock pot on low (generally this will be the evening before you plan to serve it for lunch or supper the next day).
Two or four hours before serving pour a little BBQ sauce on the meat. Serve with buns and extra BBQ sauce on the side |

Boil it/! Oh no, Please. Don't do that! Just roast in the oven, on a rack so the fat can drip away. And that's only if you don't have a smoker.
Just use yoru favorite BBQ sauce. I like this one:
Jack’s Old South Competition Vinegar BBQ Sauce
2 cups cider vinegar
3 tablespoons ketchup
2 tablespoons paprika
2 tablespoons brown sugar
4 teaspoons kosher salt
1 tablespoon hot sauce
1 to 2 teaspoons cayenne
1 to 2 teaspoons ground black pepper
Combine all the ingredients in a nonreactive mixing bowl, mixing until the sugar and salt dissolve. Taste for seasoning, adding pepper as needed. Transfer to a clean, sterile jar and refrigerate. Will keep for several months in refrigerator.

Jack's Old South BBQ Rub
¼ cup brown sugar
¼ cup sweet paprika
¼ cup kosher salt
3 Tbsp. black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp cayenne pepper
1 tsp dried basil
Combine all ingredients and mix well.

Should I brine a Boston butt pork before cooking it in the oven? some say to do so while others say the boston butt already has so much fat that brining isnt neccessary. Any advice? |

1 (4 pound) Boston butt pork roast
1/4 to 1/3 cup Worcestershire sauce
3/4 cup light brown sugar
1 cup apple juice
Preheat oven to 400 degrees F. Lightly grease the inside of a
casserole or deep roasting dish. Put the Worcestershire sauce into a separate bowl and soak the Boston butt pork roast in the
Worcestershire sauce. Remove roast from Worcestershire sauce and coat with brown sugar, being sure to press the brown sugar all over to form a crust. Place sugar-crusted roast in the casserole dish. Pour apple juice into the casserole, but do not pour over the sugar-crusted roast. Cover casserole or pan tightly, either with a casserole top or aluminum foil. Place the roast in the oven and immediately turn the heat down to 200 degrees F. Bake for about 5 hours. Uncover the roast and check for doneness. The meat should be so tender it falls apart
easily. If it doesn't, re-cover the roast and cook for 30 minutes more or as needed.
Note: This recipe can also be prepared in a crockpot. Prepare roast as outlined above. Put roast into crockpot insert. Pour apple juice into bottom of crockpot and add 1/2 teaspoon salt to the apple juice. Set the crockpot on high for 30 minutes and then turn the setting to low and cook for 8 hours. |
What are some good side-dish ideas to go with a oven-roasted boston-butt? I am preparing an oven-roasted boston-butt pork roast and have drawn a blank on decent side dishes. I don't want to serve the usual corn-on-the-cob and potatoes. Thanks!!! |
| Potatoes au gratin would be great. We also serve chunky applesauce (just the kind in a jar) with pork. And don't forget hot rolls or bread with lots of real butter. I am a bread and butter addict, but especially so with any roasted meat. |

Q. I am currently in culinary school and wonder where the name "Boston Butt" came from. I know the location of the cut of meat, but was wondering about the history of the name specifically. Also, why is the shoulder of the hog sometimes called "Picnic Ham"?
A. Well, one of your classmates may have beat you to the punch — seldom do we receive nearly identical questions from the same state on the same day. We took your questions to the experts at the National Pork Board and received the following answer:
"In pre-revolutionary New England and into the Revolutionary War, some pork cuts (not those highly valued, or "high on the hog," like loin and ham) were packed into casks or barrels (also known as "butts") for storage and shipment. The way the hog shoulder was cut in the Boston area became known in other regions as "Boston Butt." This name stuck and today, Boston butt is called that almost everywhere in the US,… except in Boston.
"Picnic ham" is a little challenging, even for the Pork Board folks. Generally, the shoulder is smoked, they say, which gives it a very ham-like flavor. Since picnic shoulder/ham is an inexpensive substitute for real ham (which only comes from the hind legs), they speculate that it would have been considered a good cut for casual dining — such as a picnic — rather than for use at a formal family dinner, such as Easter or Thanksgiving. |

Prepare pork butt with a light coating of yellow mustard.
Place a even, heavy coating of your favorite dry rub( See dry rub for recipe ideas).
Prepare Smoker with charcoal and wood.
When the smoker reaches 225 degrees, place your pork butt inside and cook until the internal temperature reaches 160 degrees, about 4-5 hours, or when the butt is very dark in color.
Wrap the butt in foil.
Place the butt back into the smoker and continue cooking until the internal temperature reaches 195 degrees, about 4-5 more hours.
***Cook meat around 1 1/2 hours per pound. (For a 7 pound butt, cook for about 10 hours).
Let cool slightly and trim any fat.
Pull the pork and serve hot on a bun with your favorite bbq sauce. |
